Bakharkhani is a traditional dish of old Dhaka. This food has a long history. This food is still as popular as the dry bread made in the bosom of our capital. Even in the era of fast food, the value of Bakharkhani has not decreased a bit, Bakharkhani has not been lost to modern biscuits. It is said that Mirza Agha Bakr is the inventor of Bakharkhani. For this, Bakharkhani is named after him. Mirza Agha Bakr was the zamindar of Bujurg Umedpur and Salimabad. He was the son-in-law of Murshid Quli Kharustam Jang II and the founder of Bakerganj. In the mid-seventeenth century, he invented the coveted Bakharkhani. He was not a cook. However, there is some doubt about how to prepare such a dish as Bakharkhani. In the past, only one type of Bakharkhani was made, but with the evolution of time, now many types of Bakharkhani are being made. About 20 types of Bakharkhani are now available in Dhaka. But ‘crispy’ Bakharkhani is more available. Apart from this, there is Bakharkhani with cheese, chickpeas, sugar, coconut, ovaltine, mincemeat, meat, liver, kebab etc. Mohammad Hossain’s family of Old Dhaka is famous for making Bakharkhani. Bakharkhani has no comparison for tea breakfast.
